Halloween Apple Cider

This sweet and salty concoction will keep you warm and happy on this chilly Halloween. It’s apple cider, just kicked up a notch. I first saw this on kitchenmeetsgirl.com, and I’ve adapted it ever so slightly.

I also made my own whipped cream and melted some caramel bits for the topping. This recipe is perfect for 4 mugs of cider.

1/3 cup brown sugar

1/3 cup heavy whipping cream

1 teaspoon vanilla

1/2 teaspoon sea salt

4 cups apple cider

Combine brown sugar and heavy whipping cream in a large saucepot over medium-high heat. Stir until sugar is dissolved and the mixture bubbles.

Add vanilla, sea salt and apple cider. Stir. Simmer for 10 minutes.

I used the remains of the 8oz heavy whipping cream + melted caramel bits. To make your own whipped cream, simply whisk the cream in a big bowl until it thickens a bit, add about a tablespoon of powdered sugar and whisk some more. Put the bits with a small amount of water in the microwave to melt. Voila!
