So, I love honey, but I rarely use it. It always seems like when I do want to use it, I pull it out and it has crystallized. Now, depending on my mood at that moment, I will either groan and throw it away, try to scoop some out and eat it anyway, or try to come up with some not-so-ingenious method of heating it up really quickly in the microwave. All of these options are giant fails on my part.
But, finally, during the coughing haze of my most recent bout of winter cold, I came up with a brilliant way to solve this dilemma of unwanted honey crystals! I had about half a container of honey, so I scooped out all I could into a small mason jar. Then, I put that jar into a small pot of water and set it on the stove to boil. I let it boil for about 5 minutes, lifted it out with an oven mitt and stirred it, and put it back in the boiling water for another 5 minutes. I set it on the counter to cool, stirred it a little bit more, and magically, it became honey again!
Now, keeping it in the mason jar should make it easy to boil again when it inevitably decides to re-crystallize. And my plan for future honey purchases is to buy it in a plastic container, but then transfer it to a mason jar when I get home. Honey problems, solved! Everything looks better in a mason jar anyway.
