Oatmeal Butterscotch Cookies

I was wandering down the baking aisle one day looking for inspiration and I found butterscotch chips. What the what?! I didn’t even know that was a thing! So, I looked on the back of the bag for recipe suggestions and found this cookie recipe. Sold! I love it when it’s that easy.

Nestle calls these “Oatmeal Scotchies,” but that’s too cutesy for even me. Let’s just call them what they are: Oatmeal Butterscotch Cookies.

I know some of you may be thinking butterscotch may not be your thing. Well, my dad who really only likes chocolate chip cookies, and variations thereof, absolutely devoured these. I have included the picture to prove it. I’m sure he’ll be thrilled that I’ve forced him into cyberspace and onto my blog. LOL, dads. 🙂


1 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1 cup (2 sticks) butter or margarine, softened

3/4 cup granulated sugar

3/4 cup packed brown sugar

2 large eggs

1 teaspoon vanilla extract

3 cups quick or old-fashioned oats

11-oz. pkg NESTLÉ® TOLL HOUSE® Butterscotch Flavored Morsels



Preheat oven to 375 degrees.

Combine flour, baking soda, salt and cinnamon in small bowl. Beat butter, granulated sugar, brown sugar, eggs and vanilla extract in large mixer bowl.

Gradually beat in flour mixture. Stir in oats and morsels. Drop by rounded tablespoon onto ungreased baking sheets.

Bake for 10 minutes. Enjoy!
